Classes are held Sunday or Monday evenings from 7pm-10pm, unless otherwise stated.
Classes are Hands-on and limited to 12 participants. |

Handmade Truffles

Beginner-I Student

Learn about the history of chocolate and its similarities to wine. Participate in a chocolate tasting and discussion. Then it's into the kitchen to learn the basics of how to make chocolate candies. In this class you will learn about chocolate tempering, ganache making, forming, enrobing truffles and you will decorate the truffles made. You will take home all your chocolates made in class as well as the recipes used. Cost: $90.00

This night we jump straight into chocolate as there will be a lot of material to cover in 3 hours. In this class you will expand on chocolate tempering, learn how to create your own flavors of ganache, shaping and dipping techniques as well as the basics of decoration. You will actually temper the chocolate to dip your creations. You'll take home your chocolates including recipes and tempering instructions. Cost: $90.00

| Intermediate (Pre-requisite Beginner II) |

Another full night of education and fun! In this session you will temper using your bare hands. You will expand on your knowledge of chocolate through your understanding of why it is called tempering. You will explore more delicate ganaches including what happens when a ganache breaks (and how to fix it!). You will learn about Pave` and will watch as the Pave` is cut on a confectioner cutter. We will discuss the use of dipping tools and each student will dip several different chocolate creations. Chocolates, recipes and instructions included. Cost: $90.00

| Advanced Level I (Pre-requisite Intermediate) |

Now that you know the basics you get to develop your skills as a beginning Chocolatier! This class will take place over 2 evenings with homework between classes. You will practice tempering, dipping and decorating. We will create a layered confection and each student will have the opportunity to use a guitar cutter. Other recipes made in class will include Beurre Au Chocolate, Caramelized Hazelnuts and several other more challenging recipes. Chocolate recipe binder with space for all of your recipes will be included. Cost: $250.00 |

CLASS CANCELLATION/NO SHOW POLICY: At Downey's Chocolates, we know that life happens. That is why we are proud to offer you the most accommodating cancellation policy of any culinary school in the country. If you cannot attend class, send us an email at info@mychocolatefix.com 48 HOURS BEFORE the scheduled class and we will give you credit towards a future class. If you cancel after this time or miss a class, no refunds or credit will be given but you may receive the class handout which includes the recipes. If there is a waiting list for the class you cancel and we can fill your space, we will give you credit towards a future class. If you are unable to attend class, you may send someone in your place. Refunds will only be given if Downey's Chocolates cancels the class. We truly appreciate your patronage and look forward to serving you for years to come. |
